From Eggshells to Philly in 10 Weeks; Early Goose Cheesesteaks

Inspiration comes in many forms. It can be unique, or it can be entirely common. The inspiration for this recipe was simply and immediately provided by one of our writers a couple of years back in 2019 when I asked, “Hey, who’s got an idea for a recipe?” and someone replied “Philly Goose Cheesesteaks”. The tactics for the hunt that provided the meat were simply to find harvested pea fields and look for geese to hunt on them. Inspired by a unique recommendation, and satiated by an entirely common early goose season tactic.

Now, if you’ve ever gone on a road trip to hunt waterfowl, you may have found yourself without much to do in the middle of the day between the morning hunts and evening scouting drives. If you can get ahold of a few hoagie buns, an onion, some cheese, and peppers; we’ve got a way for you to replenish some spent calories, burn some time, and use an early-season Goose or two. One Goose breast makes about 6 small Philly goosesteak sandwiches.

Need:

  • Goose Breast(s)

  • Onion

  • Bell Pepper

  • Provolone Cheese

  • Hoagie Rolls

  • Seasoning Blend; Equal Parts:

    • Salt

    • Black Pepper

    • Paprika

    • Chili Powder

    • Onion Powder

    • Garlic Powder

    • Thyme

    • Marjoram

  • Sharp Knife

For this recipe, we went out on an early goose hunt, then came home and grabbed my Traeger Ranger and the Traeger Power Inverter, and drove out to the garden to get to work. Let’s begin.

Step 1: Shoot some greasy early-season honkers.

Step 2: Breast birds. Remove breasts, tenders, and heart (optional).

Step 3: Start Traeger and heat to 325.

Step 4: Chop up onion and peppers. Throw them on the griddle-top with some goose fat (or butter/oil).

 
 

Step 5: Slice one goose breast into 1/8-1/4” thick pieces, about 1” square. Season with the blend. Add to veggies.

 
 

Step 6: After about 10 minutes (stirring veggies and meat every few minutes), add the cheese (I used 8 slices) and allow to melt. Mix everything together and then serve on a hoagie.

 
 

Step 7: Enjoy!
