Traeger Presents: Teriyaki Goose Heart Skewers

Without a doubt, the subject of this article probably lands somewhere on your ‘strange foods’ index- and that’s fine. But, despite its uncommon use in the kitchen, the heart is a very palatable and healthy choice of meat. So, the next time you’re breasting out your birds, think about this article then reach in up under that breastplate and pull out the heart!

The blend of black pepper and garlic, as well as the teriyaki and pineapple, along with the crisp bell pepper and onions make this a great recipe for all. Paired with a Traeger grill, you’re bound to impress your friends and family with this unique waterfowl recipe.

Remember this recipe the next time you pile up some birds- goose heart skewers go great with jalapeno poppers and take about the same amount of effort, so don’t forget to give them a shot! I used goose hearts as well as tenders in this recipe.

Ingredients:

  • Goose Hearts/Tenders

  • Teriyaki Sauce

  • Ground Black Pepper

  • Garlic Powder

  • Bell Peppers

  • Red Onion

  • Pineapple Chunks

  • Skewer Sticks

 
 

Step 1: Shoot geese, remove hearts! Tenders can be used too, to increase the amount of meat available for the skewers.

Step 2: Remove caps from hearts. Brine hearts in salt-water for a day or two.

Step 3: Add meat to Teriyaki sauce, enough Teriyaki sauce to cover the meat. Add ground black pepper and garlic powder, enough for your preference. Stir it up an marinate for at least 4 hours. Chop up peppers and onions and prepare pineapple before the next step. Soak skewers in water for a while to ensure they don’t burn up on the grill.

 
 

Step 4: Pre-heat your Traeger to 400 degrees. Prepare skewers.

Step 5: Cook for a total of 15-20 minutes at 400 degrees, flipping once in the middle. Like any waterfowl dish, you don’t want to overcook the meat!

Step 6: Remove and ENJOY with friends!

When you think about all the geese you are going to shoot this fall, just imagine how for every 8 geese you can make two delicious skewers of meat for an afternoon or evening treat. It really adds up, and its better you enjoy the meat rather than the trash can or the carcass pile out on the back forty!
